- 2 beef steaks, approx. 8 oz (225 g) each - 2 large eggs, approx. 2 oz (57 g) each - 2 cloves garlic, minced (0.2 oz / 6 g) - 2 tbsp (28 g) butter
1. Pat steaks dry and bring to room temperature. Heat a heavy skillet over medium-high heat and melt 1 tbsp (14 g) butter until foaming; add minced garlic and cook briefly until fragrant. 2. Add steaks to the skillet and sear 3–5 minutes per side for medium-rare (adjust time for thickness and desired doneness), basting with garlic butter as they cook. 3. Transfer steaks to a plate to rest for 5 minutes. Wipe the skillet if desired, then melt remaining 1 tbsp (14 g) butter and cook the eggs sunny-side up or to your preference. 4. Place the fried eggs atop each rested steak and serve immediately.
