- 4 bone-in pork chops, approx. 6 oz (170 g) each - 4 large eggs, approx. 2 oz (57 g) each - 4 cloves garlic, minced (0.4 oz / 12 g) - 3 tbsp (42 g) butter
1. Bring pork chops to room temperature. In a large skillet over medium heat, melt 2 tbsp (28 g) butter and add half the minced garlic; cook briefly until fragrant. 2. Add pork chops and sear 4–6 minutes per side until golden and cooked through to desired doneness, spooning pan butter and garlic over the chops while cooking. 3. Transfer chops to a plate to rest. Wipe skillet if needed, then melt remaining 1 tbsp (14 g) butter and fry eggs to preferred doneness in the garlic-infused butter. 4. Serve each pork chop topped with a fried egg and spoon any remaining garlic butter from the pan over the meat.
