1. Preheat smoker to maintain an internal temperature of 225°F (107°C). 2. Bring the roast to near room temperature (about 30–60 minutes), pat dry, and place fat-side up directly on the smoker grates. 3. Smoke the roast until a well-formed exterior crust develops and the internal temperature reaches approximately 160°F (71°C), then continue smoking until probe-tender and the internal temperature reaches about 200°F (93°C); total time will commonly be 4–6 hours depending on size and smoker. 4. Remove the roast from the smoker and let rest, loosely tented, for 30–45 minutes. 5. Slice against the grain or pull into larger pieces and serve.
