1. Combine soy sauce, sugar, mirin, sesame oil, garlic, grated pear, green onions, sesame seeds, and black pepper in a bowl to make the marinade; add beef and toss to coat, then marinate at least 30 minutes or up to 4 hours refrigerated. 2. Heat a large skillet or grill pan over high heat with vegetable oil; spread marinated beef in an even layer and cook quickly, stirring or flipping, 2–4 minutes until caramelized and cooked through. Serve hot with steamed rice and lettuce wraps.
