- 4 New York strip steaks, approx. 8 oz (225 g) each - 2 tsp (10 g) kosher salt - 1 tsp (2 g) freshly ground black pepper - 2 tbsp (30 ml) olive oil, divided - 2 ripe avocados, halved and diced - 1 cup (150 g) diced tomato - 1/4 cup (40 g) red onion, finely chopped - 2 tbsp (30 ml) fresh lime juice (about 1 lime) - 1/4 cup (15 g) chopped fresh cilantro - 1 small jalapeño, seeded and minced (optional) - 1/4 tsp (1 g) kosher salt for salsa, plus more to taste
1. Brush steaks with 1 tbsp (15 ml) olive oil and season evenly with kosher salt and black pepper; let rest at room temperature 20–30 minutes. 2. Preheat grill to high heat and oil grates; place steaks on grill and cook 4–5 minutes per side for medium-rare (adjust to thickness and preference). 3. While steaks grill, combine diced avocado, tomato, red onion, lime juice, cilantro, jalapeño, remaining 1 tbsp (15 ml) olive oil, and 1/4 tsp (1 g) salt in a bowl; gently toss and hold chilled. 4. Remove steaks from grill and rest 5–8 minutes; slice against the grain and serve topped with avocado-tomato salsa.
