2 tbsp (30 ml) olive oil 4 salmon fillets, about 1 lb total (454 g total) 6 cups (180 g) fresh spinach leaves 1 lemon
1. Heat olive oil in a pan over medium heat. 2. Season the salmon fillets with salt, pepper, and squeeze some lemon juice over them. 3. Place the salmon skin-side down in the pan and cook for about 4-5 minutes. Flip and cook for another 3-4 minutes or until the salmon is cooked through. Remove from the pan and set aside. 4. In the same pan, add a little more olive oil if needed and toss in the fresh spinach leaves. 5. Sauté for about 2-3 minutes until the spinach wilts. Season lightly with salt and pepper. 6. Serve the cooked salmon on a bed of the sautéed spinach, garnished with lemon slices if desired.
