1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil. 2. In a large skillet over medium heat, add olive oil and sauté garlic and onion until soft but not browned, about 2-3 minutes. Stir in spinach and tomatoes. Cook until spinach is wilted and tomatoes are softened. Season with salt, pepper, oregano, and basil. Remove from heat and set aside. 3. Using a sharp knife, carefully cut a pocket into each chicken breast. Be sure not to cut all the way through. Stuff each pocket with the spinach-tomato mixture, securing the opening with toothpicks or kitchen twine. 4. Place the stuffed chicken breasts in the prepared baking dish. Drizzle a little olive oil over the top and sprinkle with additional salt and pepper. 5. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and juices run clear.
